SPANISH DELIGHTS

(Rice Pudding)

Ingredients:

6 Tablespoons of rice
3 Cups of milk
6 Tablespoons of sugar
1 Lemon
1 Stick of cinnamon
2 Tablespoons of cinnamon powder

Boil a pot with abundant water. Once the water is boiling, pour the rice and simmer for just 10 minutes. Pour the milk in another saucepan and add the sugar, stirring to dissolve. When the rice has been cooking in water for 10 minutes, strain the rice and add it to the hot milk together with the lemon peel and a piece of cinnamon stick. Leave it cooking for another 10 minutes and turn off heat. 
Remove the lemon peel and pour the content into a flat plate  or individual cups. Do not worry if it seems to liquid as the rice will be absorbing the milk. Let cool for a while and sprinkle a little cinnamon to taste. Keep in the fridge for at least 1 hour before serving.
